High-Protein Cauliflower, Paneer & Pea Curry Recipe

World Vegetarian Day is on 1st October, so this month's recipe is all about the health boosting power of plants! We love this Cauliflower, Paneer & Pea Curry recipe, which is super tasty, low in fat and easy to make.

To add even more protein, you could add in some meat-free chicken style pieces, and/or add in two handfuls of spinach to be like Popeye and increase those vitamins!

4 Servings

  • 2 tbsp sunflower oil
  • 225g paneer, cut into cubes
  • 150g meat-free chicken style pieces (optional)
  • 1 head of cauliflower, cut into small florets
  • 2 onions, thickly sliced
  • 2 garlic cloves, crushed
  • 2 heaped tbsp tikka masala paste
  • 500g passata
  • 200g frozen peas
  • 2 handfuls spinach (optional)
  • basmati rice to serve

Step 1
In a large non-stick frying pan heat 1 tbsp oil and then fry the paneer until crisp. Remove the crispy paneer and set aside.

Step 2
Add 1 tbsp oil to the pan and cook the cauliflower until browned. Next, add the onions and the meat-free chicken style pieces (if using) with a little more oil if needed, and cook for a further 5 mins until the onions have softened and the meat-free chicken style pieces have browned slightly.

Step 3
Mix in the curry paste and garlic, then pour in the passata along with 250ml water, and season. Bring to a simmer, then cover the pan and cook for 18 to 20 mins or until the cauliflower is tender.

Step 4
Finally mix in the frozen peas, crispy paneer, and spinach (if using) to the pan and cook for a further 5 mins. Serve with some basmati rice for a delicious and healthy meal!
